About Me

Hello....my name is David Nolan. Currently I am a Pastry Chef Instructor at Vancouver Island University in NanaimoBritish ColumbiaCanada. I have worked in the hospitality industry for over 30 years now from a dishwasher in a small restaurant to Executive Pastry Chef in 5 Diamond Luxury Hotels to my current position as Chef Instructor. My career began in BrantfordOntarioCanada where I began cooking in small restaurants and  hotels before going to Culinary School in Niagara FallsOntario. After finishing Culinary School I moved west to Kananaskis, Alberta where I stayed just over two years before moving on to Victoria, British Columbia. After 10 fantastic years in Victoria where I gained invaluable experience under 5 different Pastry Chefs it was time to move on and run my own Pastry Kitchen. After a long search I decided to jump ship to a competing Hotel Chain where over the next 8 years I worked in locations that included Montego Bay Jamaica, McLean, VA and Greensboro GA before returning to Vancouver Island to Instruct at Vancouver Island University.
